I haven't been building Easter nests for a few years. So it's not the first time this year. And yet I'm a little bit sad. My mom has two new neighbors' children. And there should be nests for them at Easter. "And what about me?" I asked her defiantly last week. "There are potato nests for you!" - potato nests? Can you eat them?

And how to eat them. They are made from potatoes - of course. In addition, there are also dried tomatoes, ricotta and parmesan. Did mom create this especially for me? It's my favorite Italian trio. In the middle then an (Easter) egg, ham and cheese again. After all, you can't have enough. That's the theory. And also in practice. Has already tried it - for my sister. And she was more than enthusiastic about the potato nests. Or secretly bake it yourself.

Instead of potato nests, you can also fill your tuber into real taste buns. Sometimes with salmon, sometimes with couscous. The filled tuber is then called kumpir. You have to try that!

The recipe for your potato nests

How to do it:

  • Wash the potatoes and cook in a little water for about 20 minutes, then drain. Peel the potatoes and coarsely grate them on a kitchen grater.

  • Drain and drain the sun-dried tomatoes, collecting some oil. Cut into small pieces.

  • Preheat the oven to 200 ° C top / bottom heat. Grease eight hollows of a muffin tin with the collected tomato oil.

  • Put the grated potatoes with tomatoes, ricotta and 60g parmesan in a bowl and mix together. Season the mixture well with nutmeg, salt and pepper and pour into the prepared hollows, pulling up one edge. Pre-bake in a hot oven for about 15 minutes.

  • In the meantime, cut the ham into fine strips. Wash marjoram and shake dry. Pluck the leaves and roughly chop them.

  • Take nests out of the oven. Beat 1 egg in the middle and season with salt and pepper. Spread the ham strips, marjoram and the rest of the parmesan on top. Bake in the hot oven for about 12-14 minutes.
