Ingredients for 3 servings

700G Chateaubriand (double sirloin)
250ml strong red wine
300ml Beef bouillon
1prize Salt pepper


  1. For Chateaubriand First wash the whole meat, dry it and rub it with ground pepper.
  2. Then fry the meat well on all sides in hot oil, then place in the oven at 120 ° C on the middle rack. Use a core temperature meter as this is the only way to know when the meat is perfectly cooked.
  3. At a core temperature of 65 ° C, the meat is still nice and rosy on the inside and is taken out of the oven. Put the Chateaubriand in another pan, cover and let rest for 10 minutes.
  4. In the meantime, cut the onion into small pieces and roast it in the meat stock. Deglaze with red wine and reduce to 1/3.
  5. After boiling down, add the stock and the cream and reduce by half again. Pass the sauce through a sieve and season with salt and pepper.
  6. Serve the sliced ​​Chateaubriand with the sauce and the desired side dish (steamed vegetables, potatoes, etc.).
